Jane McDonald’s Coconut Tarts

A massive thank you to Jane McDonald for supporting Blind Veterans UK by sending us her favourite tart recipe. These tarts look cute decorated with a cherry on the top, yum!

Pastry:

Jane's coconut tarts are delicious!

8 oz Self Raising Flour
Pinch of Salt
2 oz Lard
2 oz Butter
Cold Water

Filling:
4 oz Marg
4 oz Caster Sugar
4 oz Desiccated Coconut
1 Egg
Jam

Method

Mix flour and salt in bowl, rub in butter and lard.  Add cold water to form dough.  Roll out pastry  thinly on a floured surface.  Cut into rounds using a 7.5 cm cutter and line tart tins.

Cream together butter and sugar.  Add egg and whisk.  Mix in desiccated coconut.

Put a teaspoon of jam in the bottom of each tart case.  Add a spoonful of coconut mixture on top. 

Bake on 190 °C for 15-20 minutes.
